200 g buckwheat flour
1 tsp bicarbonate of soda
1 large free range egg, beaten
600 ml rice milk
2 tbsp water
80 g blueberries
¼ tsp butter, for cooking

Method: How to make Buckwheat and blueberry pancakes

1. Place the buckwheat and bicarbonate of soda in a bowl. Make a well in the middle and put the egg in the well. Whisk in the rice milk gradually then add the water and mix that in too. Finally mix in the blueberries.

2. Pour a ladle full of mixture into a very hot non-stick pan greased with just a smidgen of butter of melted butter.

3. Cook on a medium heat until bubbles appear on the surface. Flip over and cook for about a minute on the other side. Keep warm until you are ready to get stuck hin
